Pickled Onions
Some foods have the power to make practically any dish taste better. For me, pickled onions are one (along with roasted red pepper, sun-dried tomatoes and artichoke hearts...yummm). So I decided to start making my own! This quick pickled onion recipe takes just 5 minutes to make and your onions will be ready to eat in less than an hour! Use them on top of burgers, salads, or anything else that needs a little extra somethin’ somethin’.
Makes: 2 jars
Ingredients
- 1 red onion, peeled and thinly sliced (I recommend using a mandoline for this!) 
- 1/4 cup of raw or coconut sugar 
- 1 Tbsp salt 
- 2 cups water 
- 1 cup vinegar (I usually use apple cider vinegar since it’s on hand, but you can use rice vinegar or even white vinegar) 
- Several cloves of garlic, sliced or halved 
- Pinch of peppercorns 
Instructions
- Boil 2 cups of water. 
- Once the water is boiling, turn off the stove and add sugar, salt, and vinegar. Stir to dissolve. 
- Place the sliced onions, garlic, and peppercorns into your two jars. 
- Pour the water/ vinegar mixture into the jars, and allow to cool. 
- Place a lid over the jar and refrigerate. Your onions will be ready to eat in as little as 30 minutes (but will be tastier after a couple of hours) and can be stored for 1-2 weeks. Enjoy!
