5-Minute Mediterranean Salad
This salad has been my go-to for a few weeks now, so I wanted to share it with you all! Itβs super simple to throw together and is a great source of healthy fats. I love to add a dollop of hummus, drizzle some olive oil and lemon juice, and finish it off with some S&P. This salad also tastes great with my favorite Greek salad dressing from Primal Kitchen!
Makes: 1 salad
Ingredients
- 2+ cups mixed greens 
- 1/2 cup chickpeas 
- 1/4 cup diced cucumber 
- 1/4 cup roasted red pepper, sliced into strips 
- 8-10 olives 
- 2 Tbsp dressing (olive oil, lemon juice, sea salt and pepper OR Primal Kitchen Greek Vinaigrette) 
- 1 Tbsp hemp seeds 
- 1/4 cup hummus (optional) 
Instructions
- To a large bowl, add your leafy greens, chickpeas, roasted red pepper, cucumber, and olives. 
- Drizzle dressing (DIY olive oil/ lemon juice/ salt and pepper or Greek vinaigrette) and sprinkle hemp seeds on top. 
- If using, add hummus (I usually add hummus with the olive oil dressing, but leave it out if I am using the Greek vinaigrette).
