Coconut Brownie Bites
These Coconut Brownie Bite energy balls are my favorite! They’re so easy to make and they’re healthy and yummy enough to eat as a balanced snack or a healthy dessert. Trust me, you’ll definitely want to keep these brownie bite energy balls on rotation so you always have them on hand!
Makes: 14 bites
Ingredients
- 1 cup almonds* 
- 1/4 cup cacao powder 
- 1/2 cup unsweetened coconut flakes, divided 
- 1 cup pitted dates, soaked and drained 
- 1.5 Tbsp coconut oil, melted 
Instructions
- Soak dates in water for 30-60 minutes. 
- Combine the almonds, cacao powder and 1/4 cup of the shredded coconut together in a food processor. Process into a fine powder. 
- Add the soaked dates and coconut oil, and blend until the mixture is well-combined and incorporated into a thick batter. 
- Roll the batter into small bite-sized balls, just smaller than a golf ball. Then roll each ball through a bowl with the remaining coconut flakes to coat. 
- Refrigerate and enjoy! 
*Try swapping out all or part of the almonds for walnuts to up your omega-3's!
