Arugula + Orange Salad
I’m not usually a fruit-in-my-salad kind of girl, but the citrus-forward flavors in this salad recipe have me coming back for more every time! It’s so fresh and bright and has a perfect balance of sweet + bitter with some extra crunch (thanks to the radishes and sunflower seeds). I think you’re going to love this citrusy salad!
Makes: 4-6 servings
Ingredients
Salad
- 1 bag arugula 
- 2 oranges, peeled and sliced into thin rounds (save end pieces to juice for dressing) 
- 1 can cannellini beans, rinsed and drained 
- ¼ cup sunflower seeds or slivered almonds 
- 2 oz. crumbled goat cheese (or feta) 
- ½ cup radishes, thinly sliced 
Dressing
- ¼ cup extra-virgin olive oil 
- 3 tbsp lemon juice 
- 1 tbsp orange juice (squeeze leftover end pieces of oranges or reserve some orange for fresh juice) 
- 1 ½ tsp honey 
- ¼ tsp sea salt 
Instructions
- Place the arugula into a large serving bowl. Arrange the orange slices, cannellini beans, sunflower seeds, goat cheese and radishes on top. Set to the side. 
- In a small bowl, combine the olive oil, lemon juice, orange juice, honey and salt. Whisk together until blended. 
- Drizzle the citrus-y dressing over the salad, toss, and serve! Note: If you’re making this salad ahead of time, keep the dressing in a small mason jar and drizzle over salad just before eating so your arugula doesn’t wilt.
